Palak Paneer

Palak Paneer is a delicious North Indian dish made with spinach, paneer (Indian cheese), and a blend of spices. This creamy and nutritious curry is perfect to enjoy with rice or naan.
Ingredients
- 2 bunches of spinach, washed and chopped
- 200g paneer, cut into cubes
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1-inch piece of ginger, grated
- 3 cloves of garlic, minced
- 1 green chili, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons oil
- In a large pot, blanch the spinach leaves in boiling water for 2 minutes. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and blend the spinach into a smooth puree. Set aside.
- Heat oil in a pan and add cumin seeds. Once they splutter, add the onions, ginger, garlic, and green chili. Saute until the onions are translucent.
- Add the chopped tomatoes and cook until they turn soft.
- Stir in the turmeric powder, coriander powder, garam masala, salt, and pepper. Cook for a few minutes until the oil starts to separate.
- Pour in the spinach puree and cook for 5-7 minutes until the flavors are well combined.
- Add the paneer cubes and heavy cream. Simmer for another 5 minutes.
- Adjust the seasoning if needed. Serve hot with rice or naan bread.
