Ingredients
  • 2 bunches of spinach, washed and chopped
  • 200g paneer, cut into cubes
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1-inch piece of ginger, grated
  • 3 cloves of garlic, minced
  • 1 green chili, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons oil
  1. In a large pot, blanch the spinach leaves in boiling water for 2 minutes. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and blend the spinach into a smooth puree. Set aside.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the onions, ginger, garlic, and green chili. Saute until the onions are translucent.
  3. Add the chopped tomatoes and cook until they turn soft.
  4. Stir in the turmeric powder, coriander powder, garam masala, salt, and pepper. Cook for a few minutes until the oil starts to separate.
  5. Pour in the spinach puree and cook for 5-7 minutes until the flavors are well combined.
  6. Add the paneer cubes and heavy cream. Simmer for another 5 minutes.
  7. Adjust the seasoning if needed. Serve hot with rice or naan bread.
