Chicken Tikka Masala

Chicken Tikka Masala is a popular Indian dish made of marinated and grilled chunks of chicken in a rich, creamy, and flavorful tomato-based sauce. It's a comforting and satisfying dish that pairs perfectly with rice or naan bread.
Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tbsp lemon juice
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 tsp chili powder
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 1 onion, finely chopped
- 2 tbsp butter
- Fresh cilantro leaves for garnish
- Salt and pepper to taste
- In a bowl, combine yogurt, lemon juice, cumin, paprika, turmeric, coriander, garam masala, chili powder, garlic, and ginger. Add chicken pieces, coat well, cover, and refrigerate for at least 1 hour.
- Preheat the oven to 400°F (200°C). Thread marinated chicken onto skewers and place on a baking sheet. Bake for 20-25 minutes or until cooked through.
- In a large skillet, melt butter over medium heat. Add onions and cook until soft and translucent.
- Add diced tomatoes and cook for 5 minutes. Stir in heavy cream and simmer for another 5 minutes.
- Add the cooked chicken tikka pieces to the sauce, simmer for a few more minutes, and season with salt and pepper.
- Serve hot, garnished with fresh cilantro leaves. Enjoy with rice or naan bread!
