Enchiladas are a classic Mexican dish consisting of tortillas rolled around a savory filling, covered in sauce, and baked until deliciously gooey. This recipe uses a filling of shredded chicken, cheese, and onions, topped with a flavorful red enchilada sauce.
Ingredients
- 8-10 corn tortillas
- 2 cups cooked and shredded chicken
- 1 cup shredded cheese (such as cheddar or monterey jack)
- 1/2 cup diced onion
- 2 cups red enchilada sauce
- Fresh cilantro (for garnish)
- Sour cream (optional, for serving)
- Sliced avocado (optional, for serving)
- Preheat your oven to 350°F (175°C).
- In a large skillet, sauté the diced onion until translucent.
- Add the shredded chicken to the skillet and mix well with the onions.
- Warm the corn tortillas in a separate skillet or microwave to make them pliable.
- Place a spoonful of the chicken mixture in the center of each tortilla, sprinkle with cheese, and roll up the tortilla.
- Place the rolled enchiladas seam-side down in a baking dish.
- Pour the red enchilada sauce over the enchiladas, making sure they are fully coated.
- Sprinkle any remaining cheese on top of the enchiladas.
- Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
