Enchiladas are a classic Mexican dish consisting of tortillas rolled around a savory filling, covered in sauce, and baked until deliciously gooey. This recipe uses a filling of shredded chicken, cheese, and onions, topped with a flavorful red enchilada sauce.

Ingredients
  • 8-10 corn tortillas
  • 2 cups cooked and shredded chicken
  • 1 cup shredded cheese (such as cheddar or monterey jack)
  • 1/2 cup diced onion
  • 2 cups red enchilada sauce
  • Fresh cilantro (for garnish)
  • Sour cream (optional, for serving)
  • Sliced avocado (optional, for serving)
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, sauté the diced onion until translucent.
  3. Add the shredded chicken to the skillet and mix well with the onions.
  4. Warm the corn tortillas in a separate skillet or microwave to make them pliable.
  5. Place a spoonful of the chicken mixture in the center of each tortilla, sprinkle with cheese, and roll up the tortilla.
  6. Place the rolled enchiladas seam-side down in a baking dish.
  7. Pour the red enchilada sauce over the enchiladas, making sure they are fully coated.
  8. Sprinkle any remaining cheese on top of the enchiladas.
  9. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
