Tacos al Pastor are a popular Mexican street food dish made with marinated pork cooked on a vertical spit, similar to shawarma. The pork is thinly sliced and served in tortillas with pineapple, onion, cilantro, and salsa.

Ingredients
  • Pork shoulder or pork butt, thinly sliced
  • Dried guajillo chilies
  • Dried ancho chilies
  • Achiote paste
  • Garlic cloves
  • White vinegar
  • Pineapple juice
  • Pineapple chunks
  • Onion, sliced
  • Cilantro
  • Lime wedges
  • Small corn tortillas
  • Salsa of choice
  1. Prepare the marinade by blending dried guajillo chilies, dried ancho chilies, achiote paste, garlic cloves, white vinegar, and pineapple juice in a blender until smooth.
  2. Marinate the thinly sliced pork with the marinade for at least 4 hours or overnight in the refrigerator.
  3. Once marinated, thread the pork slices onto a vertical spit.
  4. Cook the pork on a grill or rotisserie until fully cooked and the edges are slightly charred.
  5. Slice the cooked pork thinly.
  6. Heat the corn tortillas in a pan or on a griddle.
  7. Assemble the tacos by placing slices of al pastor pork on the tortillas.
  8. Top with pineapple chunks, sliced onion, and cilantro.
  9. Serve the tacos al pastor with lime wedges and salsa on the side. Enjoy!
