Tacos al Pastor

Tacos al Pastor are a popular Mexican street food dish made with marinated pork cooked on a vertical spit, similar to shawarma. The pork is thinly sliced and served in tortillas with pineapple, onion, cilantro, and salsa.
Ingredients
- Pork shoulder or pork butt, thinly sliced
- Dried guajillo chilies
- Dried ancho chilies
- Achiote paste
- Garlic cloves
- White vinegar
- Pineapple juice
- Pineapple chunks
- Onion, sliced
- Cilantro
- Lime wedges
- Small corn tortillas
- Salsa of choice
- Prepare the marinade by blending dried guajillo chilies, dried ancho chilies, achiote paste, garlic cloves, white vinegar, and pineapple juice in a blender until smooth.
- Marinate the thinly sliced pork with the marinade for at least 4 hours or overnight in the refrigerator.
- Once marinated, thread the pork slices onto a vertical spit.
- Cook the pork on a grill or rotisserie until fully cooked and the edges are slightly charred.
- Slice the cooked pork thinly.
- Heat the corn tortillas in a pan or on a griddle.
- Assemble the tacos by placing slices of al pastor pork on the tortillas.
- Top with pineapple chunks, sliced onion, and cilantro.
- Serve the tacos al pastor with lime wedges and salsa on the side. Enjoy!
