Mapo Tofu is a popular Chinese dish with a bold and spicy flavor. This dish features soft tofu in a savory and spicy sauce, perfect for pairing with steamed rice.

Ingredients
  • 1 block of soft tofu (about 14 oz)
  • 2 tbsp vegetable oil
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 1/2 lb ground pork
  • 2 tbsp doubanjiang (broad bean paste with chili)
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1 cup chicken or vegetable broth
  • 1 tsp cornstarch mixed with 2 tsp water (slurry)
  • 1 tsp Sichuan peppercorns, toasted and ground
  • 2 green onions, thinly sliced
  • Cooked white rice, for serving
  1. Cut the tofu into cubes and set aside.
  2. Heat the vegetable oil in a pan over medium heat. Add the minced garlic and ginger, and sauté until fragrant.
  3. Add the ground pork to the pan and cook until browned.
  4. Stir in the doubanjiang, soy sauce, and Shaoxing wine. Mix well.
  5. Pour in the chicken or vegetable broth and bring to a simmer.
  6. Gently add the tofu cubes to the pan and simmer for about 5 minutes.
  7. Stir in the cornstarch slurry to thicken the sauce.
  8. Add the ground Sichuan peppercorns and green onions. Mix well.
  9. Serve the Mapo Tofu hot over cooked white rice.
