Mapo Tofu

Mapo Tofu is a popular Chinese dish with a bold and spicy flavor. This dish features soft tofu in a savory and spicy sauce, perfect for pairing with steamed rice.
Ingredients
- 1 block of soft tofu (about 14 oz)
- 2 tbsp vegetable oil
- 2 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 1/2 lb ground pork
- 2 tbsp doubanjiang (broad bean paste with chili)
- 1 tbsp soy sauce
- 1 tbsp Shaoxing wine (or dry sherry)
- 1 cup chicken or vegetable broth
- 1 tsp cornstarch mixed with 2 tsp water (slurry)
- 1 tsp Sichuan peppercorns, toasted and ground
- 2 green onions, thinly sliced
- Cooked white rice, for serving
- Cut the tofu into cubes and set aside.
- Heat the vegetable oil in a pan over medium heat. Add the minced garlic and ginger, and sauté until fragrant.
- Add the ground pork to the pan and cook until browned.
- Stir in the doubanjiang, soy sauce, and Shaoxing wine. Mix well.
- Pour in the chicken or vegetable broth and bring to a simmer.
- Gently add the tofu cubes to the pan and simmer for about 5 minutes.
- Stir in the cornstarch slurry to thicken the sauce.
- Add the ground Sichuan peppercorns and green onions. Mix well.
- Serve the Mapo Tofu hot over cooked white rice.
