Egg Fried Rice

Egg fried rice is a simple and delicious dish made with fluffy rice, scrambled eggs, and a mix of vegetables and seasonings. It's a popular Chinese takeout dish that you can easily make at home!
Ingredients
- 2 cups of cooked rice (preferably chilled)
- 2 eggs, beaten
- 1/2 cup mixed vegetables (carrots, peas, bell peppers, etc.)
- 2 green onions, chopped
- 2 cloves of garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- 2 tablespoons vegetable oil for cooking
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add the beaten eggs and scramble them until they are cooked. Remove from the pan and set aside.
- In the same pan, add the remaining tablespoon of oil. Add the minced garlic and cook until fragrant.
- Add the mixed vegetables and cook until they are slightly tender.
- Stir in the chilled cooked rice and break up any clumps. Cook for a few minutes until the rice is heated through.
- Add the soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine.
- Push the rice to one side of the pan and pour the beaten eggs onto the other side. Scramble the eggs and mix them into the rice.
- Season with salt and pepper to taste.
- Remove from heat and stir in chopped green onions.
- Serve the egg fried rice hot, garnished with extra green onions and sesame seeds, with a side of soy sauce if desired. Enjoy!
