Egg Fried Rice

Egg fried rice is a simple and delicious dish made with fluffy rice, scrambled eggs, and a mix of vegetables and seasonings. It's a popular Chinese takeout dish that you can easily make at home!

Ingredients
  • 2 cups of cooked rice (preferably chilled)
  • 2 eggs, beaten
  • 1/2 cup mixed vegetables (carrots, peas, bell peppers, etc.)
  • 2 green onions, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil for cooking
  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  2. Add the beaten eggs and scramble them until they are cooked. Remove from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of oil. Add the minced garlic and cook until fragrant.
  4. Add the mixed vegetables and cook until they are slightly tender.
  5. Stir in the chilled cooked rice and break up any clumps. Cook for a few minutes until the rice is heated through.
  6. Add the soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine.
  7. Push the rice to one side of the pan and pour the beaten eggs onto the other side. Scramble the eggs and mix them into the rice.
  8. Season with salt and pepper to taste.
  9. Remove from heat and stir in chopped green onions.
  10. Serve the egg fried rice hot, garnished with extra green onions and sesame seeds, with a side of soy sauce if desired. Enjoy!
