Ingredients
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1/4 cup vegetable oil
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup pineapple chunks
  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • Sesame seeds for garnish
  1. In a bowl, coat the chicken pieces in cornstarch, then dip them in the beaten eggs.
  2. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken until crispy and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, sauté the bell peppers until slightly tender. Add the pineapple chunks.
  4. In a separate bowl, mix together ketchup, rice vinegar, brown sugar, and soy sauce. Pour the sauce into the skillet with the bell peppers and pineapple.
  5. Stir in the cornstarch mixture and cook until the sauce thickens.
  6. Add the cooked chicken back into the skillet and toss everything together until well coated.
  7. Serve the Sweet and Sour Chicken over rice, garnished with sesame seeds. Enjoy!
