Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cut into cubes
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/2 cup ice water
  • 6-7 Granny Smith apples, peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 egg, beaten (for egg wash)
  • Additional sugar for sprinkling
  1. Make the Crust: In a food processor, pulse together the flour, salt, and sugar. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs. Slowly add the ice water and pulse until the dough comes together. Divide the dough in half, flatten into disks, wrap in plastic, and refrigerate for at least 1 hour.
  2. Prepare the Filling: In a large bowl, toss the sliced apples with lemon juice. In a separate bowl, mix together the sugars, cinnamon, nutmeg, and cornstarch. Add the sugar mixture to the apples and toss to coat.
  3. Assemble the Pie: Preheat the oven to 375°F (190°C). Roll out one dough disk to fit a 9-inch pie dish. Fill with the apple mixture. Roll out the second dough disk and either place on top as a whole crust or cut into strips for a lattice design. Crimp the edges and brush the pie with the egg wash. Sprinkle with sugar.
  4. Bake the Pie: Place the pie on a baking sheet to catch any drips. Bake for 45-55 minutes or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, cover loosely with foil.
  5. Serve: Allow the pie to cool slightly before serving. Enjoy a slice of warm apple pie on its own or with a scoop of vanilla ice cream.
